Cabbage, from the family Brassicaceae, is a flowering plant with leaves forming a compact cluster with a “head” in the center, and leaves that grow outward. Cabbage is said to taste “bitter or sharp”, and is used in many dishes, cooked or raw. Raw cabbage is found as the main ingredient in coleslaw, or can replace lettuce in sandwiches. When cooked, it is used in soups, stews, or stuffed with meat. Cabbage is a great source of Vitamin C, B6, and folate.
