Arugula, Eruca Sativa, is an annual plant with elongated dark green leaves that are lobed like the leaves of an oak while in the ground the plant resembles a loose lettuce with long, slender leaves. Arugula is said to have a strong “peppery-mustard” like taste. It is most commonly used in salads; however it can also be used in meat, pastas, added to pizza, and used as a substitute for basil in pesto recipes. It is very low in calories and is a great source of vitamin A and vitamin C.
