Lettuce, Lactuca Sativa, is a leafy vegetable with a lengthened stem that eventually branches creating a head with leaves sprouting off the base. It is a good source of Vitamin A, and folic acid, while also being very low in calories. Romaine, growing in a long head with sturdy leaves, is the most common lettuce used in Caesar salad combined with croutons, parmesan cheese and a creamy dressing. The thick ribs in all of the leaves contain a milky fluid which creates the “bitter-herb” like taste of Romaine lettuce.
