Fennel, Foeniculum vulgare, has feathery green leaves and yellow flowers that are used as an herb, while growing from a white bulb that has celery-like stalks and is eaten as a vegetable. Fennel’s sweet and mild tasting leaves are used on many egg and fish dishes while the bulb, tasting a bit like black licorice, can be eaten raw or cooked in side dishes such as salads, pastas and risottos. This vegetable is high in vitamin C and potassium.
