Collards, relative of cabbage, mustard and kale, are leafy green vegetables with large, smooth, dark green leaves and an upright stalk. Collards are commonly eaten cooked as meal fillers, and can be found in southern dishes complementing meat and cornbread. The smaller the leaf, the milder the taste, however when left standing for too long, they can be bitter.
