Kale, a form of cabbage, has loose ruffly leaves rather than forming a head. Its ruffly leaves are what distinguishes it from it’s close relative, collard greens. Kale, found in many dishes from around the world, is often cooked, however the leaves trimmed from the stalks can be eaten raw in salads. Cooked Kale is used in soups, mashed potatoes, pizza, and eaten as a side dish by itself, or sautéed is said to be delicious with olive oil, lemon, or salt. As Kale is said to taste sweeter when frozen, and “intense” when raw, it is loaded with nutrients such as calcium, vitamin C and A and beta carotene.
