Chard, relative of the beet, is a leafy vegetable with bright stems and vibrant ruffled leaves, in which the stems and leaves can both be eaten. The leaves are most commonly eaten steamed, roasted, sautéed, or grilled because when raw they’re said to be slightly bitter. However when raw, the leaves are used in salads. The leaves are found on Mediterranean pizzas, risotto, and soups. Chard is extremely rich in magnesium, calcium, Vitamin K, iron, potassium, dietary fiber, and many other minerals and vitamins leaving it to be very good for vegetarians.
