Cauliflower, from the Brassicaceae family, is a head surrounded by crisp green leaves, sprouting from a thick stalk. The head of this vegetable is considered the “edible” part however the leaves of cauliflower can be cooked and eaten as well. Cauliflower can be roasted, boiled, pickled, steamed, and eaten raw. Its “zesty” taste makes a delicious side when served with a cheese sauce, or meat gravy. Cauliflower being low in fat, high in dietary fiber, Vitamin C, and calcium, is also a healthier alternative to mashed potatoes.
