Bok Choy, Brassica Rapa, is a leafy vegetable from the cabbage family and has crisp dark green leaves, and crunchy white stems. It is often compared to celery with stringy stalks, but has leaves resembling romaine leaves. Bok Choy is often called Chinese cabbage due to its widespread use in Chinese cuisine including Chinese soups and stir fry when cooked, or tossed with pasta and used raw in salads. High in calcium, Vitamin A and C, this vegetable has crisp texture, and a light, sweet flavor.
