Beet, also known as Beta Vulgaris, is a flowering plant with leafy stems with heart shaped leaves. The deep-red or golden yellow roots are eaten boiled either as a cooked vegetable, or cold, in a salad after cooking and adding oil and vinegar; they are said to have a sweet, “earthy” taste. These “earthy” tasting roots are very high in Vitamin B9, also known as Folate, and are high in Iron which is quite rare for vegetables.
