Escarole, Cichorium latifolia is a type of Endive. Escarole has broad light green leaves that are a little crinkled. The leaves on the outside are said to taste more bitter while the inside tastes milder. Escarole is said to be less bitter than most varieties of endive. It is rich in vitamins and minerals, especially potassium, folate, fiber and Vitamins A, and K. This leafy green is most commonly found raw in salads, but can also be cooked and added to soups, pizzas, and goes wonderfully with chicken or fish entrees.
